Recipe Steps for Stuffed Lemon Cookies

Step 1: Prepare the Cream Cheese Filling

1.In a small bowl, mix 4 oz of softened cream cheese, 2 tbsp of powdered sugar, 1 tsp of lemon zest, and 1 tsp of lemon juice until smooth. Refrigerate while preparing the dough.

Step 2: Make the Cookie Dough

2.In a large bowl, cream together ½ cup of softened butter and ¾ cup of sugar until light and fluffy.

3.Add 1 egg, 2 tbsp of lemon juice, and 1 tbsp of lemon zest. Mix until well combined.

4.Slowly add in 1 ¾ cups of all-purpose flour, ½ tsp of baking powder, and a pinch of salt. Mix until a soft dough forms.

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Make the Cookie Dough:
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, lemon zest, and lemon juice until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Prepare the Cookies:
  • Take about 1 tablespoon of cookie dough and flatten it into a disk in your hand.
  • Place about 1 teaspoon of lemon curd in the center, then fold the dough around the filling, rolling it back into a ball. Ensure the lemon curd is fully encased in the dough.
