Ingredients
 

  • For the Cookie Dough:
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest about 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • For the Filling:
  • 1 cup lemon curd store-bought or homemade
  • Optional: powdered sugar for dusting

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Make the Cookie Dough:
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, lemon zest, and lemon juice until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Prepare the Cookies:
  • Take about 1 tablespoon of cookie dough and flatten it into a disk in your hand.
  • Place about 1 teaspoon of lemon curd in the center, then fold the dough around the filling, rolling it back into a ball. Ensure the lemon curd is fully encased in the dough.
  • Place the stuffed cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake:
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked but will set as they cool.
  • Cool and Serve:
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • If desired, dust with powdered sugar before serving.
