Recipe Steps for Cinnamon Roll Cookies

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together 1 cup of softened butter, 1 cup of granulated sugar, and ½ cup of brown sugar until light and fluffy.
  3. Mix in 1 tsp of vanilla extract and 1 large egg until fully incorporated.
  4. In a separate bowl, whisk together 2 ½ cups of flour, 1 tsp of baking powder, and a pinch of salt. Gradually add this dry mixture to the wet ingredients, mixing until a dough forms.

Step 2: Cinnamon Filling

  1. In a small bowl, mix ¼ cup of melted butter with ½ cup of brown sugar and 2 tbsp of ground cinnamon to create the filling.

Step 3: Roll and Assemble

  1. Roll out the dough into a large rectangle, about ¼ inch thick.
  2. Spread the cinnamon filling evenly over the dough.
  3. Carefully roll the dough from one long side to the other, creating a tight log.
  4. Chill the dough log for about 30 minutes to make slicing easier.

Step 4: Slice and Bake

  1. Slice the chilled dough into ½-inch thick rounds and place them on the prepared baking sheet, about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are lightly golden.

Step 5: Icing Drizzle
