Step 2: Make the Butterscotch Filling

โ€ขIn a medium saucepan, melt 1/2 cup butter over medium heat. Stir in 1 cup brown sugar and cook until it begins to bubble and caramelize, about 3-5 minutes.

โ€ขSlowly whisk in 2 cups whole milk and bring the mixture to a gentle boil.

โ€ขIn a separate bowl, whisk together 4 egg yolks and 1/4 cup cornstarch. Slowly temper the egg mixture by adding a ladle of the hot butterscotch mixture to the eggs while whisking constantly.

โ€ขGradually add the egg mixture back into the saucepan, whisking continuously. Cook for an additional 2-3 minutes, until thickened.

โ€ขRemove from heat and stir in 1 teaspoon vanilla extract. Pour the butterscotch filling into the prepared pie crust.

Step 3: Chill the Pie

โ€ขCover the pie with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming. Refrigerate for at least 4 hours, or until fully set.

Step 4: Whip the Cream

โ€ขIn a large bowl, whip 1 cup heavy cream with 2 tablespoons powdered sugar and 1/2 teaspoon vanilla extract until soft peaks form.

Step 5: Serve

โ€ขOnce the pie is set, spread or pipe the whipped cream over the top. Slice and serve chilled.

Storage Options

โ€ขFridge: Store the pie covered in the refrigerator for up to 3 days.

โ€ขFreezer: You can freeze the pie without the whipped cream topping for up to 2 months. Thaw in the fridge overnight before serving.

Variations & Substitutions

โ€ขNutty Twist: Add chopped pecans or walnuts to the whipped cream topping for a bit of crunch.

โ€ขChocolate Drizzle: Drizzle melted chocolate over the pie for a chocolate-butterscotch combo.

โ€ขCookie Crust: Swap the traditional pie crust for a graham cracker or shortbread cookie crust for added texture.

โ€ขSalted Butterscotch Pie: Add a pinch of flaky sea salt on top of the whipped cream for a sweet and salty twist.
