Recipe Steps:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish.
  2. Prepare the Crust:
    • Roll out your pie crust and fit it into the prepared pie dish. Trim any excess dough and crimp the edges. Set aside.
  3. Cook the Beef Mixture:
    • In a large skillet over medium heat, cook 1 pound of lean ground beef until browned. Drain any excess fat. Add 1 finely chopped onion and 2 minced garlic cloves, cooking until the onion is soft and translucent, about 5 minutes.
    • Stir in 1 packet (or 2 tablespoons) of taco seasoning and cook for another minute. Add 1 cup of tomato sauce, 1 cup of corn kernels, and 1 cup of black beans. Mix well and let simmer for 5 minutes. Remove from heat.
  4. Assemble the Pie:
    • Spread half of the beef mixture evenly over the bottom of the pie crust. Sprinkle with 1 cup of shredded cheese. Top with the remaining beef mixture and another cup of shredded cheese.
  5. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  6. Cool and Serve:
    • Let the taco pie cool for a few minutes before slicing. Serve with your favorite toppings like shredded lettuce, diced tomatoes, sour cream, salsa, sliced olives, jalapeños, and fresh cilantro.

Storage Options:

  • Refrigerate: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
  • Freeze: Wrap the baked taco pie tightly in plastic wrap and aluminum foil. Freeze for up to 2 months. Thaw in the refrigerator overnight and reheat in the oven.
