Ingredients
 

For the Soup:

  • 1 pound ground Italian sausage
  • 1 large onion finely diced
  • 3 cloves garlic minced
  • 1 can 28 ounces crushed tomatoes
  • 1 can 14 ounces diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes optional
  • 1 bay leaf
  • 8 lasagna noodles broken into pieces

For the Ricotta Mixture:

  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For Garnish:

  • Fresh basil or parsley chopped
  • Shredded mozzarella cheese

Instructions

  • In a large pot or Dutch oven, brown the Italian sausage over medium heat, breaking it into crumbles. Drain any excess fat.
  • Add the finely diced onion and minced garlic to the pot, sautéing until the onion is translucent.

  • While the noodles cook, prepare the ricotta mixture by combining ricotta cheese, grated Parmesan cheese, salt, and black pepper in a separate bowl.
