  • 1 lb beef stew meat cut into small cubes
  • 3 tablespoons olive oil divided
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 garlic cloves minced
  • 8 cups beef broth
  • 1 cup pearl barley
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/2 cup frozen peas optional
  • Fresh parsley chopped for garnish

Instructions

Brown the Beef:

  • Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the beef cubes and season with salt and pepper. Cook until the beef is browned on all sides, about 5-7 minutes. Transfer the beef to a plate and set aside.

Sautรฉ the Vegetables:
