  • 1 lb ground beef or ground turkey
  • 1 packet 1 oz taco seasoning mix
  • 1 can 10.5 oz cream of mushroom or cream of chicken soup
  • 1 cup sour cream
  • 1 can 10 oz diced tomatoes with green chilies (drained)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 bag 32 oz frozen tater tots
  • 1/4 cup chopped green onions optional, for garnish
  • 1/4 cup chopped fresh cilantro optional, for garnish

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish.
  • Cook the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat. Stir in the taco seasoning and cook according to package instructions.
  • Mix the Filling: In a large bowl, combine the cooked meat, cream of mushroom or chicken soup, sour cream, diced tomatoes with green chilies, and half of the shredded cheeses. Stir until well mixed.
  • Assemble the Casserole: Spread the meat mixture evenly into the prepared casserole dish. Arrange the tater tots in a single layer on top.
  • Add Cheese: Sprinkle the remaining shredded cheeses over the tater tots.
  • Bake: Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.
