Recipe Steps for Spinach and Feta Grilled Cheese

Step 1: Sauté the Spinach

1.Heat a small amount of olive oil in a skillet over medium heat. Add 1 clove of minced garlic and sauté until fragrant.

2.Add 1 cup of fresh spinach and cook until wilted. Remove from heat and set aside.

Step 2: Assemble the Sandwich

3.Butter one side of each slice of bread. Place one slice, butter side down, in the skillet.

4.Add a layer of mozzarella or cheddar cheese, followed by a layer of sautéed spinach.

5.Crumble feta cheese on top, then add a final layer of mozzarella or cheddar.

6.Place the second slice of bread on top, butter side up.

Step 3: Grill the Sandwich

7.Cook the sandwich over medium heat for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is fully melted.

Step 4: Serve

8.Slice the sandwich in half and enjoy while it’s hot and cheesy!

Storage Options

Refrigerator: You can store any leftover grilled cheese in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet for best results.

  • 2 tablespoons unsalted butter softened
  • 1 cup fresh spinach chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese optional, for extra meltiness
  • 1 clove garlic minced (optional)
  • Salt and black pepper to taste
  • Optional add-ins: sliced tomatoes olives, or roasted red peppers

Instructions

  • Prepare the Filling: In a bowl, combine the chopped spinach, crumbled feta cheese, shredded mozzarella (if using), and minced garlic. Season with salt and black pepper to taste.
  • Butter the Bread: Spread the softened butter on one side of each slice of bread.
  • Assemble the Sandwiches: Place two slices of bread butter-side down in a skillet over medium heat. Spoon the spinach and feta mixture onto each slice, spreading it evenly. Top with the remaining slices of bread, butter-side up.
  • Grill the Sandwiches: Cook for about 3-4 minutes, or until the bottom is golden brown. Carefully flip the sandwiches and grill the other side for another 3-4 minutes, or until golden and the cheese is melted.
  • Serve: Once the sandwiches are golden and crispy, remove them from the skillet. Cut in half and serve warm.
