  • 1/4 teaspoon ground nutmeg optional
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups apples peeled, cored, and chopped (about 2-3 medium apples)
  • 1/2 cup chopped walnuts or pecans optional

For the Topping:

  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

Preheat the Oven and Prepare the Pan:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour an 8-inch round cake pan, or line it with parchment paper for easier removal.

Mix Dry Ingredients:

  • In a large mixing bowl, whisk together the flour, 1 cup sugar, salt, baking soda, 1 teaspoon cinnamon, and nutayltmeg if using.

Add Wet Ingredients:

  • In another bowl, beat the eggs, oil, and vanilla together.
  • Add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in the chopped apples and nuts, if using. The batter will be thick.

Prepare the Topping:

  • In a small bowl, mix 1 tablespoon sugar with 1 teaspoon cinnamon.

Bake the Cake:

  • Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  • Sprinkle the cinnamon-sugar topping evenly over the batter.
