  • 8 ounces pasta such as fettuccine, spaghetti, or penne
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • 1 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley chopped
  • Optional: Red pepper flakes for a spicy kick

Instructions

Cook the Pasta:

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Make the Garlic Cream Sauce:

  • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant but not browned.
  • Add the heavy cream and chicken or vegetable broth to the skillet. Bring the mixture to a simmer and let it cook for about 5 minutes, or until slightly thickened.
  • Stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, you can thin it with a little of the reserved pasta cooking water.
