  • 1 pound ground beef preferably 80% lean
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1.5 cups broken lasagna noodles
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning optional

Instructions

Preparation Steps

  • In a large pot, cook the ground beef over medium heat until browned.
  • Add chopped onion and minced garlic, and sauté until the onion is translucent.
  • Stir in chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil.
  • Add broken lasagna noodles and reduce heat to a simmer. Cook until noodles are tender, about 10 minutes.
  • Serve hot, topped with shredded mozzarella cheese.

Notes

For a vegetarian version, substitute beef with a plant-based alternative and use vegetable broth.
