Ingredients
 

  • 1 lb ground pork
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or Italian seasoning
  • 1 can 10.5 oz / 0.65 lbs cream of mushroom or cream of chicken soup
  • ½ cup 0.25 lbs sour cream
  • 1 cup 0.5 lbs frozen peas and carrots mix (or corn)
  • 1 ½ cups 0.75 lbs shredded cheddar cheese (divided)
  • 1 bag 32 oz / 2 lbs frozen tater tots
  • Fresh parsley or green onions for garnish optional

Instructions

  • Preheat the Oven:
  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9x13-inch baking dish.
  • Cook the Pork Mixture:
  • In a large skillet over medium heat, cook the ground pork and diced onion until browned and fully cooked (about 6–8 minutes).
  • Add garlic, salt, pepper, and thyme. Stir and cook another 30 seconds.
  • Remove from heat.
  • Mix the Filling:
  • In a large mixing bowl, combine the cooked pork mixture, cream of mushroom soup, sour cream, frozen veggies, and 1 cup of the shredded cheese. Mix until fully combined.
  • Assemble the Casserole:
  • Spread the pork mixture evenly into the prepared baking dish.
  • Arrange tater tots in a single layer over the top.
  • Sprinkle the remaining ½ cup of cheddar cheese over the tater tots.
  • Bake:
  • Bake uncovered for 35–40 minutes, or until the tater tots are crispy and golden and the casserole is bubbling.
  • Garnish & Serve:
  • Let rest for a few minutes before serving.
  • Garnish with fresh parsley or green onions if desired.
