Preheat the Oven:
Preheat your oven to 375°F (190°C).
Lightly grease a 9x13-inch baking dish.
Cook the Pork Mixture:
In a large skillet over medium heat, cook the ground pork and diced onion until browned and fully cooked (about 6–8 minutes).
Add garlic, salt, pepper, and thyme. Stir and cook another 30 seconds.
Remove from heat.
Mix the Filling:
In a large mixing bowl, combine the cooked pork mixture, cream of mushroom soup, sour cream, frozen veggies, and 1 cup of the shredded cheese. Mix until fully combined.
Assemble the Casserole:
Spread the pork mixture evenly into the prepared baking dish.
Arrange tater tots in a single layer over the top.
Sprinkle the remaining ½ cup of cheddar cheese over the tater tots.
Bake:
Bake uncovered for 35–40 minutes, or until the tater tots are crispy and golden and the casserole is bubbling.
Garnish & Serve:
Let rest for a few minutes before serving.
Garnish with fresh parsley or green onions if desired.
