1can15 oz / 0.9 lbs of sweet corn, drained (or 1 ½ cups fresh/frozen corn)
½cup0.25 lbs of sour cream
¼cup0.12 lbs of mayonnaise
½teaspoonof red pepper flakesoptional for spice
¼cup0.12 lbs of chopped green onions (for garnish)
¼cup0.12 lbs of cooked and crumbled bacon (optional, for extra flavor)
Instructions
Cook the Beef:
Heat a large skillet over medium-high heat.
Add ground beef and cook until browned, breaking it up with a spatula (5-7 minutes). If needed, drain excess fat.
Sauté the Aromatics:
Add diced onion and cook until softened (3 minutes).
Stir in garlic, smoked paprika, salt, and black pepper. Cook for another 30 seconds.
Add Seasoning & Corn:
Mix in Worcestershire sauce and ranch seasoning.
Stir in the sweet corn and cook for 2 more minutes until heated through.
Make It Cheesy & Creamy:
Reduce heat to low and fold in sour cream, mayonnaise, and half of the shredded cheddar cheese.
Stir until everything is well combined and creamy.
Melt the Cheese:
Sprinkle the remaining cheddar cheese over the top.
Cover and let cook on low until the cheese melts (2-3 minutes). Alternatively, transfer to a baking dish, sprinkle cheese, and broil for 2-3 minutes until bubbly.
Garnish & Serve:
Sprinkle with chopped green onions and crumbled bacon (if using).
Serve hot over rice, mashed potatoes, or as a filling for tacos or wraps!
