  • 1 cup marinara sauce use your favorite brand
  • 2 cups shredded mozzarella cheese

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, brown the Italian sausage over medium heat until fully cooked. Drain excess fat.
  • Add the cubed eggplant to the skillet and cook for about 5 minutes until slightly softened.
  • Stir in the marinara sauce and mix well.
  • Transfer the mixture to a casserole dish and top with shredded mozzarella cheese.
  • Bake in the preheated oven for 30 minutes or until the cheese is bubbly and golden.

Notes
