Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
In a large skillet, brown the Italian sausage over medium heat until fully cooked. Drain excess fat.
Add the cubed eggplant to the skillet and cook for about 5 minutes until slightly softened.
Stir in the marinara sauce and mix well.
Transfer the mixture to a casserole dish and top with shredded mozzarella cheese.
