  • 4 cups all-purpose flour plus extra for dusting
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.25 cup unsalted butter cold, cut into pieces
  • 1.75 cups buttermilk
  • 1 large egg lightly beaten
  • 1 cup raisins optional

Instructions

Preparation Steps

  • Preheat the oven to 375°F. Grease a cast-iron skillet or cake pan.
  • In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  • Cut the butter into the flour mixture until it resembles coarse crumbs.
  • Stir in the buttermilk and egg into the flour mixture. If using raisins, add them now.
  • Turn the dough out onto a floured surface and knead slightly.
  • Form the dough into a round and place on prepared pan.
  • Cut an 'X' into the top of the dough to help bake evenly.
  • Bake for 45 minutes or until a toothpick inserted in the center comes out clean.

Notes

For a sweeter touch, you can add a tablespoon of honey to the buttermilk mixture. Serve warm with butter or jam.
