  • ½ cup 0.25 lbs coconut milk or whole milk (or pineapple juice for extra fruitiness)
  • 1 tablespoon honey or maple syrup optional, to taste
  • 1 teaspoon lemon juice for brightness
  • Optional garnish: fresh pineapple wedges mint, or shredded coconut

Instructions

  • Blend It Up:
  • Add frozen pineapple, coconut milk, honey (if using), and lemon juice to a high-powered blender or food processor.
  • Blend until smooth and creamy, scraping down the sides as needed. This may take a few rounds depending on your blender.
  • Adjust Texture:
  • If the mixture is too thick, add a splash more milk or juice to help it blend smoothly.
  • You want a thick, soft-serve consistency—similar to a thick smoothie.
  • Serve Immediately:
  • Scoop or pipe into bowls or cones and enjoy right away for the best texture.
  • If you’d like a firmer texture, freeze for 30–60 minutes before serving.
