Ingredients

  • 1 lb ground beef
  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can 14 oz diced tomatoes (with juices)
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese plus extra for serving
  • Fresh basil or parsley chopped (for garnish)

Instructions

  • Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain and set aside.
  • Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  • Sauté Vegetables: Add the chopped onion to the skillet and cook for about 3 minutes, until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add Tomatoes and Cream: Pour in the diced tomatoes (with their juices) and stir in the heavy cream. Add Italian seasoning, salt, and black pepper. Simmer the mixture for about 5 minutes, allowing the flavors to meld.
  • Combine with Orzo: Stir in the cooked orzo and Parmesan cheese, mixing well until everything is combined and heated through.
  • Serve: Remove from heat and garnish with fresh basil or parsley. Serve warm with additional Parmesan cheese on the side.
