Instructions
Preparation Steps
In a large pot over medium-high heat, heat the olive oil and brown the beef stew meat on all sides. Remove and set aside.
In the same pot, add the onion and garlic and sauté until soft and fragrant.
Return the beef to the pot and add beef broth, water, tomato paste, and diced tomatoes.
Add the carrots, celery, potatoes, and green beans. Season with thyme, basil, salt, and pepper.
Bring to a boil, then reduce heat and let it simmer for about 1 hour, or until the vegetables are tender and the beef is cooked through.
Notes
For a richer flavor, you can add a splash of Worcestershire sauce or a bay leaf while simmering.
