  • 1.5 pounds beef stew meat cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups beef broth low sodium
  • 2 cups water
  • 2 tablespoons tomato paste
  • 1 can diced tomatoes 14.5 oz, with juice
  • 3 large carrots sliced
  • 4 stalks celery sliced
  • 3 cups potatoes peeled and diced
  • 1 cup green beans fresh or frozen
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Instructions

Preparation Steps

  • In a large pot over medium-high heat, heat the olive oil and brown the beef stew meat on all sides. Remove and set aside.
  • In the same pot, add the onion and garlic and sauté until soft and fragrant.
  • Return the beef to the pot and add beef broth, water, tomato paste, and diced tomatoes.
  • Add the carrots, celery, potatoes, and green beans. Season with thyme, basil, salt, and pepper.
  • Bring to a boil, then reduce heat and let it simmer for about 1 hour, or until the vegetables are tender and the beef is cooked through.

Notes

For a richer flavor, you can add a splash of Worcestershire sauce or a bay leaf while simmering.
