  • 0.5 cup mashed sweet potatoes cooked and cooled
  • 0.25 cup granulated sugar
  • 2.25 teaspoons instant yeast
  • 0.25 cup unsalted butter melted
  • 0.5 cup whole milk warmed
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon for filling
  • 0.5 cup brown sugar for filling

Instructions

Preparation Steps

  • In a bowl, mix together warm milk, instant yeast, and sugar. Let it sit for 5 minutes until the mixture is frothy.
  • Add flour, mashed sweet potato, melted butter, and salt into the yeast mixture. Mix to form a dough.
  • Knead the dough on a floured surface for 5 minutes, then let it rise in a warm place for 1 hour or until doubled in size.
  • Roll the dough into a rectangle, spread with brown sugar and cinnamon. Roll up and cut into 12 pieces.
  • Place rolls in a greased baking dish and let them rise for another 30 minutes.
  • Bake at 350°F (175°C) for 25 minutes or until golden brown.

Notes

You can drizzle the warm rolls with a simple icing made from powdered sugar and milk for extra sweetness.
