  • 4 large sweet potatoes washed and dried
  • 2 tablespoons olive oil divided
  • 5 cups fresh spinach roughly chopped
  • 1 cup feta cheese crumbled
  • 1 clove garlic minced
  • 0.5 teaspoon black pepper to taste
  • 0.25 teaspoon salt to taste

Instructions

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • Pierce each sweet potato several times with a fork and place on a baking sheet. Brush with 1 tablespoon of olive oil.

  • Bake in the preheated oven for 50 minutes or until tender.
  • While potatoes are baking, heat 1 tablespoon olive oil in a skillet over medium heat. Add garlic and cook until fragrant, about 1 minute. Add spinach and cook until wilted.

  • Remove cooked spinach from heat and stir in feta cheese, salt, and pepper.

  • Slice each baked sweet potato in half lengthwise and fluff the flesh with a fork. Top with the spinach and feta mixture.
