Pierce each sweet potato several times with a fork and place on a baking sheet. Brush with 1 tablespoon of olive oil.

Bake in the preheated oven for 50 minutes or until tender.
While potatoes are baking, heat 1 tablespoon olive oil in a skillet over medium heat. Add garlic and cook until fragrant, about 1 minute. Add spinach and cook until wilted.

Remove cooked spinach from heat and stir in feta cheese, salt, and pepper.

Slice each baked sweet potato in half lengthwise and fluff the flesh with a fork. Top with the spinach and feta mixture.
