  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 4 large eggs room temperature
  • 1 tablespoon lemon zest from 2 lemons
  • 1 cup buttermilk
  • 0.25 cup lemon juice freshly squeezed
  • 1 teaspoon vanilla extract

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease and flour a Bundt cake pan.
  • In a bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.
  • Cream the butter and sugar in a large bowl until light and fluffy. Add the eggs one at a time, mixing well after each. Stir in the lemon zest.
  • Add the dry ingredients to the butter mixture alternately with the buttermilk, starting and ending with the flour mixture. Mix in the lemon juice and vanilla extract.
  • Pour the batter into the prepared Bundt pan and smooth the top.
  • Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a simple glaze, mix together 1 cup of powdered sugar and 2 tablespoons of lemon juice until smooth and drizzle over the cooled cake.
