Ingredients
 

  • 12 oz elbow macaroni or any short pasta
  • 1 1/2 cups cooked ham diced (about 1/2 lb)
  • 1 cup sharp cheddar cheese cubed or shredded
  • 1/2 cup red bell pepper finely chopped
  • 1/2 cup celery thinly sliced
  • 1/4 cup red onion finely diced
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Optional garnish: fresh parsley or chives

Instructions

  • Cook the Pasta:
  • Boil pasta in salted water until just tender (al dente). Drain and rinse under cold water to stop the cooking. Set aside.
  • Prepare the Dressing:
  • In a large bowl, mix mayonnaise, sour cream, Dijon mustard, vinegar, salt, and pepper until smooth.
  • Combine the Salad:
  • Add the cooled pasta, ham, cheddar, bell pepper, celery, and onion to the bowl with the dressing. Stir until everything is well coated.
  • Chill & Serve:
  • Cover and refrigerate for at least 1 hour for the flavors to meld. Before serving, give it a stir and adjust seasoning if needed. Garnish with fresh herbs if desired.
