  • 2 cups Greek yogurt preferably plain
  • 1 cup milk almond milk or regular milk
  • 0.25 cup chia seeds
  • 2 tablespoons honey or maple syrup for sweetness
  • 1 teaspoon vanilla extract
  • 0.5 cup mixed berries for topping
  • 0.25 cup sliced almonds for topping

Instructions

Preparation Steps

  • In a medium bowl, combine the Greek yogurt, milk, chia seeds, honey, and vanilla extract. Mix well to combine.
  • Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Refrigerate for at least 4 hours or overnight, until the chia seeds have absorbed the liquid and the mixture is thickened.
  • Stir the pudding before serving. Distribute evenly into bowls and top with mixed berries and sliced almonds.

Notes

For a vegan version, replace Greek yogurt with coconut yogurt and honey with maple syrup. Add a pinch of cinnamon for an extra flavor boost.
