In a medium bowl, combine the Greek yogurt, milk, chia seeds, honey, and vanilla extract. Mix well to combine.
Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Refrigerate for at least 4 hours or overnight, until the chia seeds have absorbed the liquid and the mixture is thickened.
Stir the pudding before serving. Distribute evenly into bowls and top with mixed berries and sliced almonds.
Notes
For a vegan version, replace Greek yogurt with coconut yogurt and honey with maple syrup. Add a pinch of cinnamon for an extra flavor boost.
