  • 12 oz spaghetti uncooked
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 tbsp olive oil or as needed
  • 1 cup salsa con queso store-bought or homemade
  • 1 cup chicken broth
  • 1 tsp ground cumin
  • 0.5 tsp chili powder
  • 2 tbsp cilantro chopped, for garnish
  • 1 large lime cut into wedges, for serving

Instructions

Preparation Steps

  • Cook the spaghetti according to package directions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through.
  • Stir in the salsa con queso, chicken broth, cumin, and chili powder. Bring to a simmer.
  • Add the cooked spaghetti to the skillet and toss to coat. Cook for another 2-3 minutes until heated through.
  • Serve with chopped cilantro and lime wedges.

Notes

For extra heat, add some diced jalapeños or a pinch of cayenne pepper. This dish can be prepared in advance and reheated but is best enjoyed fresh.
