Instructions
Preparation Steps
Preheat your oven to 350°F (175°C).
Cook the spaghetti according to package instructions; drain and set aside.
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Add the taco seasoning, diced tomatoes, and tomato sauce to the skillet. Stir to combine and simmer for 5 minutes.
Add the cooked spaghetti, sour cream, and 1 cup of cheddar cheese to the skillet. Toss to combine everything evenly.
Transfer the mixture to a 9x13-inch baking dish. Top with remaining cheddar cheese and Monterey Jack cheese.
Bake in the preheated oven for 20 minutes, until the cheese is melted and bubbly.
Garnish with green onions and cilantro before serving.
Notes
You can add black beans or corn to the mixture for an extra twist. Adjust spice levels by using hot or mild taco seasoning.
