Ingredients
 

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder optional
  • 1/2 lb 1 stick cold unsalted butter, cubed
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup cold buttermilk or use 3/4 cup milk + 1 tsp lemon juice
  • Optional topping: 2 tablespoons melted butter mixed with a pinch of garlic and parsley

Instructions

  • Preheat the Oven:
  • Set oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients:
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
  • Cut in the Butter:
  • Add cold, cubed butter to the dry mix. Use a pastry cutter or your fingertips to blend until the mixture resembles coarse crumbs.
  • Add Cheese & Buttermilk:
  • Stir in the shredded cheddar, then gently fold in the buttermilk until just combined. Don’t overmix—it's okay if the dough is a little shaggy.
  • Scoop & Bake:
  • Drop heaping spoonfuls of dough (or use a large cookie scoop) onto the prepared baking sheet. Bake for 15–18 minutes, or until golden and crisp on top.
  • Brush with Butter (Optional):
  • Right out of the oven, brush the tops with melted butter mixed with garlic and parsley for an extra savory finish.
