  • 2.5 pounds red potatoes quartered
  • 8 slices bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 teaspoon sugar
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper freshly cracked
  • 1 cup romaine lettuce chopped
  • 2 tablespoons green onions sliced

Instructions

Preparation Steps

  • Place the potatoes in a saucepan, cover with water, bring to a boil, and cook until tender, about 15 minutes. Drain and let cool.
  • In a large bowl, whisk together mayonnaise, vinegar, sugar, salt, and black pepper.
  • Add the cooled potatoes, bacon, cherry tomatoes, lettuce, and green onions to the bowl. Toss gently to combine.
  • Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.

Notes

For a healthier version, substitute some of the mayonnaise with Greek yogurt.
