3–4 lbs country-style pork ribsbone-in or boneless

1/2teaspoonblack pepper
1/2teaspoonsmoked paprika
1/2teaspoongarlic powder
1large onionsliced
2–3 cloves garlicsmashed
112 oz bottle of beer (lager or amber works great)
1 1/2cupsBBQ saucestore-bought or homemade
Instructions
Season the Ribs:
Pat ribs dry and rub with olive oil. Season with salt, pepper, paprika, and garlic powder on all sides.
Brown the Ribs (Optional but flavorful):
In a large skillet or Dutch oven over medium-high heat, sear the ribs for 2–3 minutes per side to lock in flavor.
Slow Cook with Beer:
Transfer the ribs to a large pot or baking dish. Add sliced onion and garlic, then pour the beer over the top. Cover tightly with foil or a lid and bake at 325°F (160°C) for 2.5–3 hours, until the ribs are tender.
Glaze with BBQ Sauce:
Remove ribs from the liquid and place on a foil-lined baking sheet or preheated grill. Brush generously with BBQ sauce.
Finish Under Broiler or Grill:
Broiler: Set to high and broil for 3–5 minutes, until sauce bubbles and begins to caramelize.
Grill: Cook over medium heat for 5–6 minutes, flipping once and basting again, until sticky and slightly charred.
Serve:
Let rest for a few minutes, then serve with extra BBQ sauce, cornbread, coleslaw, or potato salad.
Notes
For an extra kick, try adding a dash of hot sauce to the BBQ sauce.
