Ingredients
 

  • 3 –4 lbs country-style pork ribs bone-in or boneless
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 large onion sliced
  • 2 –3 cloves garlic smashed
  • 1 12 oz bottle of beer (lager or amber works great)
  • 1 1/2 cups BBQ sauce store-bought or homemade

Instructions

  • Season the Ribs:
  • Pat ribs dry and rub with olive oil. Season with salt, pepper, paprika, and garlic powder on all sides.
  • Brown the Ribs (Optional but flavorful):
  • In a large skillet or Dutch oven over medium-high heat, sear the ribs for 2–3 minutes per side to lock in flavor.
  • Slow Cook with Beer:
  • Transfer the ribs to a large pot or baking dish. Add sliced onion and garlic, then pour the beer over the top. Cover tightly with foil or a lid and bake at 325°F (160°C) for 2.5–3 hours, until the ribs are tender.
  • Glaze with BBQ Sauce:
  • Remove ribs from the liquid and place on a foil-lined baking sheet or preheated grill. Brush generously with BBQ sauce.
  • Finish Under Broiler or Grill:
  • Broiler: Set to high and broil for 3–5 minutes, until sauce bubbles and begins to caramelize.
  • Grill: Cook over medium heat for 5–6 minutes, flipping once and basting again, until sticky and slightly charred.
  • Serve:
  • Let rest for a few minutes, then serve with extra BBQ sauce, cornbread, coleslaw, or potato salad.

Notes

For an extra kick, try adding a dash of hot sauce to the BBQ sauce.
