Preparation Steps
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
In another bowl, cream together the sugar and butter until light and fluffy. Mix in the mashed bananas and vanilla extract.
Gradually add the dry ingredients into the banana mixture, mixing until just combined. Stir in the walnuts if using.
Spoon the dough onto the prepared baking sheet, leaving space between each cookie. Bake for 10-12 minutes or until golden brown.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
