  • 0.5 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.75 cup granulated sugar
  • 0.5 cup unsalted butter room temperature
  • 2 large bananas mashed
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts optional

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  • In another bowl, cream together the sugar and butter until light and fluffy. Mix in the mashed bananas and vanilla extract.
  • Gradually add the dry ingredients into the banana mixture, mixing until just combined. Stir in the walnuts if using.
  • Spoon the dough onto the prepared baking sheet, leaving space between each cookie. Bake for 10-12 minutes or until golden brown.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

These cookies are a great way to use overripe bananas. Enjoy them warm or store in an airtight container for up to a week.
