  • 2 pounds chicken thighs bone-in, skin-on
  • 0.5 cup soy sauce
  • 0.25 cup white vinegar
  • 4 cloves garlic crushed
  • 2 pieces bay leaves
  • 1 tablespoon vegetable oil
  • 2 teaspoons whole peppercorns

Instructions

Preparation Steps

  • In a large bowl, combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Marinate for at least 30 minutes.
  • Heat oil in a deep pot over medium heat. Add marinated chicken pieces and brown on all sides.
  • Pour in the marinade and bring to a boil. Reduce heat, cover, and simmer for 30 to 35 minutes.
  • Remove the lid and let cook for another 10 minutes until the sauce is slightly reduced.

Notes

Serve the adobo chicken hot with a side of steamed rice for a complete meal.
