Instructions
Preparation Steps
In a large bowl, combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Marinate for at least 30 minutes.
Heat oil in a deep pot over medium heat. Add marinated chicken pieces and brown on all sides.
Pour in the marinade and bring to a boil. Reduce heat, cover, and simmer for 30 to 35 minutes.
Remove the lid and let cook for another 10 minutes until the sauce is slightly reduced.
Notes
Serve the adobo chicken hot with a side of steamed rice for a complete meal.
