Ingredients
 

  • For the Brownie Batter:
  • 1/2 lb 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the Peanut Butter Filling:
  • 1/2 cup creamy peanut butter
  • 2 tablespoons powdered sugar

Instructions

  • Make the Brownie Batter:
  • Preheat Oven:
  • Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini cupcake liners.
  • Mix Wet Ingredients:
  • In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  • Combine Dry Ingredients:
  • In a separate bowl, whisk together the cocoa powder, flour, baking powder, and salt.
  • Combine Batter:
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Prepare the Peanut Butter Filling:
  • Mix Filling:
  • In a small bowl, mix the peanut butter and powdered sugar until smooth.
  • Assemble the Brownie Bites:
  • Fill the Tin:
  • Spoon a small amount of brownie batter into each mini muffin cup, filling about halfway.
  • Add Peanut Butter:
  • Drop a small dollop (about 1/2 teaspoon) of the peanut butter filling in the center of each cup.
  • Top with Batter:
  • Cover the peanut butter filling with a little more brownie batter, filling the cups about 3/4 full.
  • Bake:
  • Bake:
  • Bake in the preheated oven for 12-15 minutes, or until the edges are set and the tops look slightly cracked.
  • Cool:
  • Allow the brownie bites to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
