Ingredients
 

  • 4 large flour tortillas
  • 6 large eggs
  • 1/4 cup milk
  • Salt and black pepper to taste
  • 1 tablespoon butter or olive oil
  • 1/2 cup cooked breakfast sausage diced bacon, or diced ham
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup diced tomatoes optional
  • 1/2 cup diced bell peppers optional
  • 1/4 cup chopped green onions optional
  • 1/4 cup sour cream optional
  • Salsa or hot sauce for serving

Instructions

  • Prepare the Filling:
  • Cook the Meat: In a skillet over medium heat, cook the sausage, bacon, or ham until browned and heated through. Remove and set aside.
  • Sauté Vegetables (Optional): In the same skillet, sauté the diced bell peppers and tomatoes for 3-4 minutes until softened. Set aside.
  • Cook the Eggs:
  • Whisk the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Scramble the Eggs: Heat the butter or olive oil in a skillet over medium heat. Add the egg mixture and cook, stirring gently, until the eggs are scrambled and just set. Remove from heat.
  • Assemble the Burritos:
  • Warm the Tortillas: Heat the tortillas in the microwave for 15-20 seconds or on a dry skillet until pliable.
  • Layer the Ingredients: On each tortilla, layer scrambled eggs, cooked meat, sautéed vegetables, shredded cheese, and any additional toppings such as green onions, sour cream, or salsa.
  • Wrap the Burritos:
  • Fold and Roll: Fold the sides of the tortilla inward, then roll tightly from the bottom to the top, enclosing the filling.
  • Heat (Optional):
  • Grill the Burritos: For a crispy finish, heat the burritos in a dry skillet over medium heat for 1-2 minutes per side until golden brown.
