Ingredients
 

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 8 slices bacon
  • 1/4 cup brown sugar
  • 3 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil optional, for searing

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
  • Prepare the Brown Sugar Mixture: In a small bowl, mix together the brown sugar, minced garlic, smoked paprika, salt, and black pepper.
  • Wrap the Chicken in Bacon:
  • Rub the brown sugar mixture evenly over each chicken breast.
  • Wrap each chicken breast with 2 slices of bacon, slightly overlapping to secure. If needed, use toothpicks to hold the bacon in place.
  • Optional Sear: Heat olive oil in a skillet over medium heat. Sear the wrapped chicken breasts for 1-2 minutes per side to crisp the bacon slightly.
  • Bake:
  • Transfer the chicken breasts to the prepared baking sheet or dish.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Optional Broil: For extra crispy bacon, turn the oven to broil for the last 2-3 minutes of cooking. Keep a close eye to avoid burning.
  • Serve: Let the chicken rest for 5 minutes before serving. Pair with a side of roasted vegetables, mashed potatoes, or rice.
