Ingredients
 

  • 2 medium zucchinis sliced into rounds (about 1/2 inch thick)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs panko or regular
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional, for heat
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish, optional)

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare the Zucchini: In a large bowl, combine the sliced zucchini with olive oil, garlic, salt, black pepper, and red pepper flakes (if using). Toss until the zucchini is evenly coated.
  • Mix Coating: In a separate bowl, combine the breadcrumbs, grated Parmesan cheese, and Italian seasoning.
  • Coat the Zucchini: Dip each zucchini slice into the breadcrumb mixture, pressing gently to adhere. Place the coated zucchini on the prepared baking sheet in a single layer.
  • Bake: Bake in the preheated oven for 15-20 minutes, or until the zucchini is tender and the tops are golden brown and crispy.
  • Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley if desired, and serve warm.
