Brownie Base

  • 1 box (18–20 oz) fudgy brownie mix
  • Ingredients listed on the box (eggs, oil, water)
  • 1/2 teaspoon vanilla extract
  • 1 pinch fine sea salt

Chocolate Cheesecake Mousse

  • 8 oz (226 g) cream cheese, room temperature
  • 3/4 cup (135 g) semi-sweet chocolate chips
  • 1 1/4 cups (300 ml) heavy whipping cream, divided
  • 1/3 cup (40 g) powdered sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon espresso powder
  • 1 teaspoon unflavored powdered gelatin
  • 2 tablespoons cold water (for blooming gelatin)

Brownie Batter Mousse

  • 2/3 cup dry brownie mix, heat-treated and sifted measure after heat-treating
  • 1 cup (240 ml) heavy whipping cream, cold
  • 3/4 teaspoon unflavored powdered gelatin
  • 1 tablespoon cold water (for blooming gelatin)
  • 3/4 cup chopped brownies (store-bought or leftovers)
  • 1/2 teaspoon vanilla extract (optional)

Ganache & Finish

  • 2/3 cup (115 g) dark or semi-sweet chocolate chips
  • 1/2 cup (120 ml) heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1 small pinch fine sea salt
  • 2/3 cup (160 ml) heavy whipping cream, very cold (for piping)
  • 2 tablespoons powdered sugar
  • 1 teaspoon unsweetened cocoa powder

Instructions

Preparation Steps

  • Line the bottom and sides of a 9-inch springform pan with parchment or an acetate cake collar. Set the pan on a baking sheet for easy transfer.
  • Heat-treat brownie mix for the mousse: Preheat the oven to 300°F (150°C). Spread 1 cup dry brownie mix on a parchment-lined sheet and bake 6–8 minutes, stirring once, until it reaches 165°F. Cool completely and sift; measure 2/3 cup for the mousse.
  • Increase oven temperature to 325°F (165°C). Prepare the remaining brownie mix according to the box. Stir in 1/2 teaspoon vanilla and a pinch of salt. Pour into the lined springform and bake 28–33 minutes, until the edges are set and the center is just slightly soft. Cool 20 minutes on a rack, then chill in the freezer for 10 minutes to speed up setting.
  • Make the ganache (it needs time to thicken): Heat 1/2 cup cream until steaming, then pour over 2/3 cup chocolate chips with a small pinch of salt and 1/2 teaspoon vanilla. Let sit 2 minutes, then whisk smooth. Cover and let it stand at room temperature until thick but pourable.
  • Cocoa whipped cream for finishing: Beat 2/3 cup very cold cream with 2 tablespoons powdered sugar and 1 teaspoon cocoa to medium peaks. Transfer to a piping bag fitted with a star tip and refrigerate.
  • Chocolate cheesecake mousse: Gently melt 3/4 cup chocolate chips with 1/4 cup of the cream (from the 1 1/4 cups) over a double boiler or in short microwave bursts; stir until smooth and slightly warm, not hot. In a large bowl, beat cream cheese, 1/3 cup powdered sugar, 1 tablespoon cocoa, 1 teaspoon vanilla, and espresso powder until completely smooth. In a small cup, sprinkle 1 teaspoon gelatin over 2 tablespoons cold water; stand 5 minutes to bloom, then microwave 8–10 seconds until liquid.
  • Whip the remaining 1 cup cold cream to soft peaks. With the mixer on low, stream in the melted gelatin and continue whipping just to medium peaks. Whisk the melted chocolate into the cream cheese mixture, then fold in the stabilized whipped cream in two additions until no streaks remain.
  • Assembly—first layer: Place the cooled brownie base back into the prepared springform. Spread the chocolate cheesecake mousse evenly over the brownie, tapping the pan lightly to level. Refrigerate 20–30 minutes (or freeze 10–12 minutes) until the surface feels set.
  • Brownie batter mousse: In a chilled bowl, whip 1 cup cold cream to soft peaks. Gradually sift in the heat-treated 2/3 cup dry brownie mix while beating on low, then increase to medium until slightly thickened. Bloom 3/4 teaspoon gelatin in 1 tablespoon cold water for 5 minutes; microwave 6–8 seconds to liquefy. With the mixer on low, stream in the gelatin and whip to medium-firm peaks. Fold in 3/4 cup chopped brownies and 1/2 teaspoon vanilla (if using).
  • Assembly—second layer: Spoon the brownie batter mousse over the first layer and smooth the top. Refrigerate at least 4 hours, or until the layers are fully set (overnight is best).
  • Finish: Release the springform and remove the collar/parchment. If the ganache is too thick, warm it for a few seconds until pourable. Pour onto the center of the cake and nudge toward the edges to create gentle drips. Chill 10 minutes, then pipe cocoa whipped cream rosettes around the border. Tip for clean slices: warm a thin knife under hot water and wipe between cuts.

Notes

Serve well-chilled for the best mousse definition and a clean, restaurant-style cut. Store covered in the refrigerator for up to 3 days, or freeze (without whipped cream) for up to 1 month and thaw overnight in the fridge.
