  • 1 tablespoon olive oil
  • 1 onion finely chopped

  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 pound ground turkey
  • 4 cups chicken broth
  • 2 cans 15 ounces each white beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4 cups kale stems removed and chopped
  • Salt and pepper to taste

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the finely chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are softened.
  • Add the ground turkey to the pot, breaking it up with a spoon and cooking until browned.
  • Pour in the chicken broth, white beans, dried thyme, dried rosemary, and add the bay leaf. Stir to combine.
  • Bring the soup to a simmer, allowing it to cook for about 15-20 minutes to let the flavors meld.
  • Add the chopped kale to the pot and simmer for an additional 5-7 minutes or until the kale is tender.
  • Season the Turkey White Bean Soup with salt and pepper to taste, adjusting as needed.
  • Discard the bay leaf and ladle the soup into serving bowls.
