  • 0.75 cup pecans, finely chopped
  • 1 cup powdered sugar confectioners' sugar
  • 2 tsp lime zest, finely grated from about 2 limes
  • 0.25 tsp kosher salt
  • 0.33 cup tequila blanco
  • 2.5 tbsp orange liqueur such as triple sec or Cointreau
  • 3 tbsp fresh lime juice
  • 2.5 tbsp agave syrup or light corn syrup
  • 0.5 cup granulated sugar for coating
  • 1 tsp extra lime zest for coating
  • 0.25 tsp flaky sea salt for coating

Instructions

Preparation Steps

  • Stir wafer crumbs, pecans, powdered sugar, lime zest, and kosher salt in a large bowl.
  • Whisk tequila, orange liqueur, lime juice, and agave in a small bowl until smooth.
  • Pour the liquid into the dry mixture and mix until evenly moistened. Let it rest 5 minutes to hydrate.
  • Combine granulated sugar, extra lime zest, and flaky sea salt in a shallow dish for coating.
  • Scoop and roll 1-inch balls with damp hands. If crumbly, add 1–2 tsp more lime juice or agave.
  • Roll each ball in the citrus sugar to coat. Chill 20–30 minutes until set, then serve.

Notes

Variation: Swap pecans for almonds, or add a tablespoon of shredded coconut for a tropical twist. Storage: Keep chilled in an airtight container for up to 1 week, or freeze for 1 month; coat with fresh sugar after thawing if needed.
