Instructions
Preparation Steps
Pat the chicken dry with paper towels.
Rub olive oil all over the chicken.
In a small bowl, mix salt, pepper, paprika, garlic powder, onion powder, thyme, and rosemary.
Rub the spice mixture evenly over the chicken.
Place chicken breast-side up in the slow cooker.
Squeeze lemon juice over the chicken, and add lemon halves inside the cavity of the chicken.
Cover and cook on high for 3-4 hours, or until the internal temperature reaches 165°F.
Notes
For an extra crispy skin, transfer cooked chicken to a baking sheet and broil for 4-5 minutes.
