  • 4 pound whole chicken cleaned and giblets removed
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 1 lemon halved

Instructions

Preparation Steps

  • Pat the chicken dry with paper towels.
  • Rub olive oil all over the chicken.
  • In a small bowl, mix salt, pepper, paprika, garlic powder, onion powder, thyme, and rosemary.
  • Rub the spice mixture evenly over the chicken.
  • Place chicken breast-side up in the slow cooker.
  • Squeeze lemon juice over the chicken, and add lemon halves inside the cavity of the chicken.
  • Cover and cook on high for 3-4 hours, or until the internal temperature reaches 165°F.

Notes

For an extra crispy skin, transfer cooked chicken to a baking sheet and broil for 4-5 minutes.
