  • 1 cup vegetable oil
  • 1 cup all-purpose flour for making the roux
  • 2 pounds chicken thighs boneless, skinless, cut into chunks
  • 1 pound andouille sausage sliced
  • 1 cup celery chopped
  • 1 large green bell pepper chopped
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 8 cups chicken broth
  • 2 teaspoons salt to taste
  • 1 teaspoon black pepper ground
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme dried
  • 2 bay leaves
  • 1 pound okra sliced
  • 1 bunch green onions chopped, for garnish
  • 0.5 cup fresh parsley chopped, for garnish
  • 8 cups cooked white rice for serving

Instructions

Preparation Steps

  • Heat oil in a large pot over medium-high heat.
  • Stir in flour to create a roux, cooking and stirring constantly until it is a rich brown color, about 10-15 minutes.
  • Add chicken and sausage to the roux, cooking until browned.
  • Stir in celery, bell pepper, onion, and garlic, cooking until vegetables are soft.
  • Gradually add chicken broth, stirring constantly to blend into the roux.
  • Season with salt, pepper, Cajun seasoning, thyme, and add bay leaves. Simmer for 1 hour, stirring occasionally.
  • Add sliced okra, cooking for an additional 10-15 minutes.
  • Remove bay leaves before serving. Serve warm over cooked rice and garnish with green onions and parsley.

Notes

For best results, use fresh ingredients and adjust seasoning to taste. Gumbo is even better the next day, allowing the flavors to meld.
