Ingredients
 

  • 1 can 15 oz whole kernel corn, drained
  • 1 can 15 oz cream-style corn
  • 2 large eggs lightly beaten
  • 1/2 cup milk
  • 1/2 cup crushed saltine crackers or breadcrumbs
  • 1/4 cup unsalted butter melted
  • 1 tablespoon sugar optional, for sweetness
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese optional, for topping
  • 1/4 cup crushed crackers or breadcrumbs for topping

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or a similar-sized casserole dish.
  • Combine Ingredients: In a large mixing bowl, combine the whole kernel corn, cream-style corn, beaten eggs, milk, crushed crackers, melted butter, sugar (if using), salt, and black pepper. Mix well to combine.
  • Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it out evenly.
  • Prepare the Topping: If desired, sprinkle the top with shredded cheddar cheese and additional crushed crackers or breadcrumbs.
  • Bake: Bake in the preheated oven for 45-50 minutes, or until the casserole is set in the center and the top is golden brown.
  • Cool and Serve: Let the scalloped corn cool for 5 minutes before serving.
