  • 4 large sweet potatoes peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme or rosemary
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  • Prepare Sweet Potatoes: In a large mixing bowl, toss the cubed sweet potatoes with olive oil, minced garlic, grated Parmesan cheese, dried thyme, salt, and black pepper. Ensure the sweet potatoes are evenly coated.
  • Spread on Baking Sheet: Spread the sweet potatoes in a single layer on the prepared baking sheet. Make sure they are not too crowded, so they roast evenly and become crispy.
  • Roast: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the sweet potatoes are tender and golden brown, stirring halfway through to ensure even cooking.
  • Garnish and Serve: Remove from the oven and sprinkle with additional Parmesan cheese if desired. Garnish with chopped fresh parsley and serve warm.
