Instructions
Preparation Steps
Preheat your oven to 425°F (220°C).
Pat the chicken dry with paper towels, both inside and out. Place in a roasting pan.
Rub the olive oil all over the chicken and season with salt, pepper, lemon juice, and thyme.
Roast the chicken in the preheated oven for 80 minutes, or until the internal temperature reaches 165°F (75°C).
Remove from oven, cover with aluminum foil, and let rest for 10 minutes before serving.
Notes
For added flavor, stuff the chicken cavity with lemon halves and fresh herbs before roasting.
