  • 1 refrigerated pie crust store-bought or homemade
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 1 bell pepper diced
  • 1 cup broccoli florets chopped
  • 1 cup cherry tomatoes halved
  • 1 cup baby spinach chopped
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup whole milk
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme optional
  • 1/4 teaspoon red pepper flakes optional

Instructions

  • Set the oven temperature to the recommended setting for pie crust preparation.
  • Roll out the pie crust and press it into a pie dish, trimming any excess crust from the edges.
  • Heat the olive oil in a pan over medium heat. When the onion is transparent, add the finely chopped onion and simmer.
  • Add diced bell pepper, chopped broccoli, and halved cherry tomatoes to the skillet. Vegetables should be sautéed until just soft.
  • Cook the young spinach in the skillet with chopped leaves until it wilts.
