Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups milk any kind, but whole milk makes them richer
  • 1 large egg
  • 3 tablespoons unsalted butter melted (plus more for greasing the pan)
  • 1 teaspoon vanilla extract optional, for extra flavor

Instructions

Mix Dry Ingredients:

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Combine Wet Ingredients:

  • In another bowl, beat the egg lightly with a fork, then whisk in the milk, melted butter, and vanilla extract (if using).

Combine Wet and Dry Ingredients:

  • Pour the wet ingredients into the dry ingredients. Stir until just combined. It's okay if the batter is a little lumpy; do not overmix.

Preheat Your Pan or Griddle:

  • Heat a non-stick pan or griddle over medium heat. Brush with a little melted butter or oil.

Cook the Pancakes:

  • For each pancake, pour about 1/4 cup of batter onto the griddle. Wait until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancake and cook for another 1-2 minutes on the other side, until golden brown.

Serve Warm:

  • Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh berries, sliced bananas, or whipped cream.
