Ingredients

any kind, but whole milk makes them richer

unsalted butter
melted (plus more for greasing the pan)

vanilla extract
optional, for extra flavor
Instructions
Mix Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Combine Wet Ingredients:
In another bowl, beat the egg lightly with a fork, then whisk in the milk, melted butter, and vanilla extract (if using).
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients. Stir until just combined. It's okay if the batter is a little lumpy; do not overmix.
Preheat Your Pan or Griddle:
Heat a non-stick pan or griddle over medium heat. Brush with a little melted butter or oil.
Cook the Pancakes:
For each pancake, pour about 1/4 cup of batter onto the griddle. Wait until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancake and cook for another 1-2 minutes on the other side, until golden brown.
Serve Warm:
Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh berries, sliced bananas, or whipped cream.
