Preparation Steps
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
In a large bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt.
In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, and milk until smooth.
Add the wet ingredients to the dry ingredients and stir until just combined.
Divide the batter evenly among the prepared muffin cups.
Bake muffins for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For an extra touch, drizzle a simple glaze made of powdered sugar and milk over the top of the cooled muffins.
