  • 1 cup pumpkin puree not pumpkin pie filling
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 0.5 cup vegetable oil
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 cup milk room temperature

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt.
  • In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, and milk until smooth.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Divide the batter evenly among the prepared muffin cups.
  • Bake muffins for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra touch, drizzle a simple glaze made of powdered sugar and milk over the top of the cooled muffins.
