Ingredients
 

  • 8 slices of thick bread like brioche, challah, or Texas toast
  • 4 large eggs
  • 1 cup whole milk or your preferred milk
  • 1/2 cup canned pumpkin puree
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • Butter or oil for cooking
  • Maple syrup powdered sugar, and whipped cream (for serving)

Instructions

  • Prepare the Batter: In a medium bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
  • Heat the Pan: Heat a large skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
  • Dip the Bread: Dip each slice of bread into the pumpkin batter, ensuring both sides are evenly coated but not soggy. Let any excess drip off.
  • Cook the French Toast: Place the dipped bread slices on the hot skillet or griddle. Cook for 2-3 minutes per side, or until golden brown and cooked through. Work in batches if necessary, adding more butter or oil as needed.
  • Serve: Serve the pumpkin French toast warm, topped with maple syrup, powdered sugar, whipped cream, or your favorite fall toppings.
