Ingredients
 

  • 1 cup pumpkin puree
  • 3/4 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease or line a 9x13-inch baking pan with parchment paper.
  • Mix Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth and well combined.
  • Mix Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • Fold in Chocolate Chips: Gently fold in the chocolate chips, reserving a handful to sprinkle on top if desired.
  • Pour into Pan: Spread the batter evenly into the prepared baking pan. Sprinkle the reserved chocolate chips on top.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Cool and Serve: Allow the bars to cool in the pan for at least 10 minutes before slicing into squares.
