Peanut Butter Cereal Bites

Ingredients
 

  • 3 cups crispy rice cereal or any favorite cereal
  • 1/2 cup peanut butter creamy or crunchy
  • 1/4 cup honey or maple syrup
  • 1/4 cup mini chocolate chips optional
  • 1/2 teaspoon vanilla extract optional

Instructions

  • Prepare the Mixture: In a medium saucepan, heat the peanut butter and honey (or maple syrup) over medium heat. Stir constantly until the mixture is smooth and fully combined. Remove from heat and stir in the vanilla extract (if using).
  • Combine with Cereal: In a large mixing bowl, pour the peanut butter mixture over the crispy rice cereal. Stir gently to coat all the cereal evenly.
  • Add Chocolate Chips (Optional): If you're adding mini chocolate chips, fold them into the mixture at this point. Be sure the mixture has cooled slightly so the chocolate chips don't melt too much.
  • Form the Bites: Using your hands or a spoon, scoop out tablespoon-sized portions of the mixture and roll them into balls. Place them on a baking sheet lined with parchment paper.
  • Chill: Place the cereal bites in the refrigerator for about 15-20 minutes to firm up.
  • Serve: Once firm, enjoy the peanut butter cereal bites as a quick snack. Store any leftovers in an airtight container in the refrigerator.
