Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Grease a mini muffin tin with cooking spray or butter.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Mix well.
Add the wet ingredients to the dry ingredients and stir until combined. Do not overmix.
Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Let the pancake bites cool in the pan for 5 minutes before removing. Serve warm with maple syrup or your favorite toppings.
