  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup milk room temperature
  • 2 large eggs lightly beaten
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease a mini muffin tin with cooking spray or butter.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Mix well.
  • Add the wet ingredients to the dry ingredients and stir until combined. Do not overmix.
  • Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  • Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the pancake bites cool in the pan for 5 minutes before removing. Serve warm with maple syrup or your favorite toppings.

Notes

Try adding chocolate chips or blueberries to the batter for a fun twist!
